And, I have a question -- what makes green curry green? Yellow curry is yellow from the turmeric (I think, in the main) and red is probably red from either paprika or pepper, but I'm confused by green.

The one time I had a thai friend cook green curry for me, he used them, along with green chiles. I'm not sure if we're talking about the same thing, but the package was labelled "curry leaves" on one side and something in Thai or Cambodian on the other side.

I've never tried cooking curries myself, because I'm the only member of my family who would eat them.

There is such a thing as a curry tree. I will check out a jar of green and a jar of red curry paste at the store.

    3 small fresh green chillies, chopped
    2 cloves garlic, chopped
    3 spring onions, chopped
    1/4 cup chopped fresh lemon grass
    1/4 cup chopped fresh coriander leaves
    2 tblspns oil
    2 tblspns water
    1 teaspoon shrimp paste
    1/2 teaspoon ground cumin
    1/4 teaspoon ground turmeric

    Put all ingredients for green curry paste into blender and process until smooth or if you don't have a blender use the old fashioned way with mortar and pestle.

*and by "you people" I mean the fat people besides PPNYC

I just did some quick research online. It appears that kaffir lime leaves are more commonly used in green curries than curry leaves, although all rely on a good amount of green chile.
