OK. But afterwards, do you think that lemon water will be enough, or should I use a stronger brine?
These aren't infants. Once you get past about 15 months, you need to brine them or go for a dry salt cure for about three days to a week, then either cold smoke them or slow braise.

Lil' Punk Prosciutto? I think the salt-cured legs hanging over Gatti's kitchen island would make for a charming Rustic Italiano effect.

The air on the coast is too damp for prosciutto. If he wants that kind of texture and depth of flavor, he'll have to go with a three-week salt cure and let them hang for about 260 days in a room with the windows open and a dehumidifier to keep the humidity at less than 40%.

umm, I've been looking the other way as Ironhead/Taxwimp and Gotaitch have spun these weird cannibal missives, but we really need to enforce "on topic" here. who is the mod for this board? could we please get all this junk deleted and maybe get a probation warning to the offenders? Specility boards are of no use if an interested party has to wade through so much garbage.

I have no idea what you mean. Every one of my posts has been on-topic. I don't criticise the way you parent; what gives you the right to criticise me?

Friends,

I have a problem.

Our next door neighbor is a nice enough fellow. Early 50s, kids grown and gone, and IIRC divorced about 10 years ago. Interesting enough guy, intelligent, good dinner companion. A bit odd in some ways (for example, he rents out a bedroom to students from time to time, and from the traffic to and from the house it reminds me a bit of a hostel), but whatevah....

You mentioned the lack of reciprocity so I'm not sure if a little of that might ease the situation. That's if you are okay with the house situation over there and feel comfortable with them there. For awhile, I was the one (voluntarily) who had the neighbor's 2 kids over pretty much every Saturday night and then some. On the one hand, it was nice because the kids are nice (a sweet 4 year old; an 8 year old who is nice but a little too talkative) and it was nice not to be the big clown entertaining my 3 year old from 7 am to 9 pm on a Saturday. After a while though....I got a call saying "X child wants to play with Vietbabe" and I promptly said "great, we'll be right over", deposited VB at their house and then went to the movies. After that, they got the hint and now, we're in a pretty cool unspoken kid-swapping arrangement where I do Sat. night and on Sunday night I usually get a few free hours after 5 pm to catch up on some work or do stupid stuff in the yard like retransplant every week the same Hosta which is overtaking the house.

If you really don't want the kids over anymore, then when they show up, declare that they can all play for a few minutes, but then you are going out. When the neighbor sees you haven't gone anywhere, they'll get the hint that limited play time is all they can expect.

Alternately, you can send them an itemized bill for babysitting services. Speaking of bills, my Saturday nights with the kids at the house include me feeding them dinner and dessert, which can get pricey. I wonder why they don't say (as they go off to dine at a nice Thai restaurant), "Hey, we'll order a pizza to be delivered to your house". I'd love that. Oh well.

Which one of you has twins? Balty, Soup?

I asked the neighbor twins (identical girls) to play with the Lexling - they are 5w difference in age (all about 2.5). The response I got is this, "The twins have each other and don't need anyone else to play with."

How do you even respond to something like that? I'm afraid my response was more of an audible gasp.

What do you predict for their futures?

That's creepy. There are some parents of twins who find that their kids don't do well socializing with singles, but this is more because they tend to gang up on the singleton. Often, those twins do best with other sets of twins; it's just more symetrical. While not strongly true of my twins, they do often have an easier time with their friends who are also twins (of whom they have more than you might think due to the local parents of multiples club).

But "they have each other" is just weird.
