I put some fresh green salsa on a tamale without checking the due date on the salsa. I was ill (but not really violently, just really nauseated and headachey and finally made myself throw up in hopes it would make me feel better, and it kind of did). The next day, I noticed that the top of the green salsa container was bowed. And then that the due date had passed.
