a quick burrito search would note that burritos have been done out of hand many times over and its always the same, while the demand in most of our cities for burritos is quite high all of the burrito places outside of so cali blow. I don’t’ understand how that can be given the cheap ingredients and unskilled labor but its probably explained by the same phenomenon by which Coltrane is able to hang onto sequels despiute the diminishing returns he provides.

Go to San Francisco. For whatever reason, its burritos are generally two or three levels of yumminess above those in the Los Angeles basin. We do good tacos here and some very tasty fajitas, and decent chips and salsa, and very nice tamales . . . but we can't get the $6 burrito right. One of the world's great unsolved mysteries.
