I have a closing 11/26 and plan to handle it on vacation - we'll get all the real work done by 11/24 and then a paralegal can fax signature pages and I'll do the wires and any last minute changes from remote.
(My model is a guy I know who has a couple of file cabinets shipped to his hotel room on vacation -- we have this image of Old Bill in his trunks on the beach, white stuff on his nose and a file cabinet next to him, pouring over documents under an umbrella).

I think it's great that you get away, but I really don't like to be working on a vacation. Integral to a vacation is the mental relaxation that comes when you aren't worrying about phone calls or faxes or meetings or e-mail. Two+ week vacations are best, because it takes me a week to stop thinking about the work. It doesn't take very much work at all to fuck this up for me. If someone wants to reach me to learn something I know, I'm OK with that, but if I've got to be doing something, it really isn't much of a vacation.
