If a restaurant gives me a choice, I assume they stand by their meat.
At home, I grind my own (ground) beef, so I have no worries.
Most of the e coli problems are in pre-formed patties anyway, since most reputable supermarkets grind meat on the premises, far away from the rest of the cow.
