Crunch? A crunchy fish taco? Blasphemy. Maybe that's your problem. You've never really had a proper fish taco.
The ones at the La Salsa by my house are not bad. They use wahoo with a spicy rub. Grill the fish, add cabbage and a spicy chipotle sauce. All good. On a soft shell.
And how is fish any more or less mild than chicken in a taco?
Two corn tortillas filled with grilled Wahoo and crisp cabbage. Topped with our Baja sauce, avocado and Jack and Cheddar cheeses.
