what we need here is the conveyor belt raw fish with vinegared rice. In Japan sushi is made as art and only bt trained professionals, so it is very expensive.
One response to this has been the creation of a restaurant style where the "sushi" is slung together much less as art and much more as simple food. a conveyor belt carries small plates next to the tables and you grab what you want. those places are cheap.
