As someone who basically only ate carbs before, I can tell you that Atkins works, in part, because you don't WANT to gorge on the foods you are allowed. It is easy and common to consume 1000 calories having cereal or chips and salsa (or hell, pizza) in one sitting. It is far less palatable to eat 8-10 chicken breasts in one sitting.
Obviously it's the calories in, calories out equation. But I'm finding that this is working for me (at least in the short term) because I WANT to cut myself off.
Also, the lack of alcohol is hugely cutting down on my daily caloric intake.
