I usually give my mom (and my dad, when it is father's day) a home-made coupon for time spent with me (SOME people actually like me -- NTTAWWT). For example, tickets to an art exhibit or a show or golf or shopping plus a coupon for dinner or drinks before or after. Flowers are overrated.
