He called to pick one [date] and then picked the time and the restaurant before I could tell him that we would be having lunch at my club (so as to avoid the awkwardness of who picks up the check).... Do I pick [the check] up? Do I offer? Do I insist? Do you care?

You pick up the check because you issued the invitation so you are the host. (This would also be true if it were a romantic date, though no one seems to know that.) Of course, the host picks the restaurant (unless soliciting guest suggestions), dunno what he was thinking there, but it indicates that he does not in fact know the correct etiquette of the situation and therefore will likely try to pick up the check, either on an "I'm the guy" or "I picked the restaurant" rationale.
Insist on getting it, with the statement "it was my idea, I invited you, I insist." If he insists 3 times, let him get it with the statement "next time it's my turn - I'll take you to my club!"
