Perhaps they get the seafood where it is local, and then have someone walk it, slowly, in an environmentally impact-free way, from e.g. Seattle to Detroit.

The short answer is that there are no salmon in the Great Lakes. Burger is making a joke that involves contemplating that if there were salmon in the Great Lakes, they would have a tough time swimming upstream (as is their wont) over Niagara Falls.

Eta that I could be all wrong as Hank says there are in fact salmon in Lake Michigan.
