You're missing much of the flavor. If you're going to spend a couple hundred bucks for a bottle of wine, you want to gently aeriate it under your tongue. It should not be a slurp. And the exercise is good for the tongue.

Slurping is the sound it makes. There's not really a better description for what it is.
It's pretention. It has nothing to do with taste. You drink your wine, you chew your food.

Be fair. In the restaurants NFH frequents, it appears that the sommelier is the one who tastes the wine. Opens it, tastes it, puts it down on the table, and then everyone else is supposed to drink it, goddammit.
