You can find a set of three knives, a chef's knife, a paring knife, and a utility knif, from Shun, on either the Sur La Table or Food Network websites. The set costs about $195, if memory serves, and the knives are of incredible quality and beautiful to behold.

I have 4 Wustof knives (the Classic, not Grand Prix -- got them basically new in the gift box at a garage sale for an insanely low price) and concur. Most important: get forged knives, not stamped ones. Also, I'd rather get one really good knife than a set of cheap ones. I also covet a Santoku (this is a style, not brand) knife.

I think buying knives as a gift is supposed to be bad, but whatever.
Is the Santoku style a ceramic thing, or those dips on each side of the blade thing?

By the way, because I know you care, I got an All-Clad LTD cookware set with a fry pan, a stock pot, a saute pan, and a sauce pan. I also got a bonus 1 qt saucepan and little bitty fry pan, and purchased the non-stick grill pan. I love it all. Now I need a saucier (3 qt. will do), a double burner griddle pan, and few good knives with a new block.

Wedding gift.
Santoku is a blade shape. The blade can be metal or ceramic, or plastic for that matter.
Kullens are the indentations on the side of knifes that ease carving by allowing the delicious juices of roast beef to provide lubricant to the carving knife.
I've been happy ordering from professional cutlery direct. www.pcd.com. If nothing else, you can see pretty much the entire line of every brand of knife.

Good choice. I heartily recommend the saucier. We got a 5 qt. several years ago, and I would say it is easily the most used pan in the house. They're great for everything.
If you're in the market for knives, see my recommendation for the Shun knives above. I will also throw in with the people who have been recommending the santoku. It's my favorite knife.

Giving a married couple a knife is a bad omen --- it predicts that their bonds will be cut. So the couple is supposed to give a coin to the person who gave them the knife, so that the knife is "purchased" in a sham transaction probably familiar to most of us.
No word on its karmic effect on spinsters.

All-Clad LTD pans. Wustof cutlery, some of it inherited from deceased relatives.
The steel is not designed for sharpening. It's designed for honing between cuts. I don't know a single real-life person who uses it for this purpose, though. The only time I've ever seen one used live, it was a guy at a carving station at a wedding, and I suspect it was for dramatic effect more than anything else.
