I recently had some delicious mint ice cream that I'm planning to recreate at home in the near future. It was white and had small flecks of mint leaves. It was tasty and looked pretty.

I am planning to make a cheesecake like the orange one and some brownies like the peanut-butter ones. I will be doing mint/chocolate and Ginger/chocolate instead of orange/chocolate and peanut butter/chocolate. Which should be brownies and which cheesecake?

I'd go with mint for the brownies (there are lots of recipes for grasshopper brownies) and ginger for the cheesecake. Then you could make the cheesecake crust with gingersnap cookie crumbs.

But I wonder if chocolate is too strong a flavor for ginger unless you put an overwhelming amount of ginger in it. I googled and more of the recipes are for white chocolate**-ginger cheesecake but there were a couple for regular chocolate.

ginger must be the cheesecake, no question- but we make a monster blueberry ginger cheesecake. i do not want to fight the hypo- but moving from the chocolate for the cheesecake might not be a bad idea (i don't like chocolate cheesecake FWIW)

In Dallas at Whole Foods I could get, in bulk, chocolate-covered ginger. It is not in the bins at the Whole Foods in BH. And may not be in the bins at the one on 3d. I need my fix.

Hypo-fighter. The crust would be chocolate and there might be choc chips.

Try Trader Joe's. Don't know for sure that it's a current item, but they have had it in the past.
