I woke up extra early this morning to make a big pancake breakfast because you had me thinking about it all day yesterday. I made bacon in the pan first, poured out all the grease (but didn't wipe it with paper towel to remove every last bit), and made the first batch that way. Both batches were phe-fucking-nominal. Topped them with strawberries and raspberries and unfancy Aunt Jemima syrup.

I made them from Jiffy mix (it was a weekday), believe it or not, and they came out fantastic -- it must have been the double-yolked egg. Those are supposed to be good luck.

Damn, now I'm hungry again.

Well, having it with the strawberries and the raspberries made it healthier than if you'd done without them. I don't think my apricot jam had the same effect. I'm glad you enjoyed your pancakes. I am not shitting you, the recipe in the JoC is the BEST EVER, if you ever have time to make them on a weekend (and have the buttermilk and stuff). I think pancakes are kind of like pizza/sex/whatever -- even when they're bad, they're good.

You could always add an extra egg yolk.

I actually think I will from now on.

I had (great) pizza for lunch. And (great) sex before breakfast. It's been a fantastic fucking day.

Pancakes can be bad, and pizza for sure can suck. Haven't you had frozen pizza? No, your post would read better is you delete "pizza" and insert "bacon."

The most recent one doesn't seem to involve sifting or cake flour, and came out really damn good this morning. Except it needed more buttermilk--too thick. And I think I'd cut back the butter to 2 Tbps, instead of 3, as the butter flavor came through a bit too strong.

Were they very very light and fluffy? Perhaps I will check out the more recent JoC . . .

Light and fluffy, yet pretty thick (i.e., 1/4" to 3/8") and that was with about 1 3/4 cup buttermilk, instead of the 1 1/2 called for.

I had the BEST macaroni and cheese on the weekend. With crispy fried onions on top. A huge bowl and I ate the whole thing! At the Eatery on 9th Ave., for those in NYC. With my husband while discussing our quickie divorce/romantic getaway plans. Oh my god it was so fucking good.

If you check out the letters to the editor in this month's Fine Cooking, you'll find an irate missive from my brother regarding an "authentic" Texan chili recipe. Two other irritated Texans were moved to write as well.

What, no linky? You know I'm too lazy to get off my ass and go to the library.
