Barley mushroom soup is one of the most heavenly things on earth.
1 onion med. dice
2 ribs celery med. dice
2 carrots med. dice
1 clove garlic mashed
2 bay leaves
pinch thyme
1 cup red wine
2 qt. beef stock
black pepper
1.5 cups barley
mushrooms (button, crimini, oyster, chanterelle) sliced
sweat first four ingredients until onion is translucent, add a pinch kosher salt at beginning
add bay leaf, thyme, red wine and cook until wine is reduced by half
add barley, stock and black pepper to taste, bring to boil and then simmer for 2.5 to 4 hours
add mushrooms and let simmer for one hour
wheat berries and barley both make for an interesting variation on risotto. be sure you boil them for 45 minutes in stock or water before preparing as risotto. mushrooms work well, as do asparagus. this makes a very good side for braised short ribs or lamb shanks.

On Saturday I made Michael Volt's menu from Food & Wine. Braised shortribs with Indian spice, carrots braised in beer and carrot juice, and gnocchi. Deep-fried gnocchi -- essentially the gnocchi meets the Tater Tot and the result is pure orgasmic goodness. I may be ruined for normal Tater Tots for years to come.

Definitely. It's actually pretty easy to cook, it just takes some time for the braise. I made an afternoon of leisurely cooking, and had time to throw together some brownies and some fruit salad (for dessert, and for the kids/wife appeasement, respectively).
Then a friend came over and we watched the UFC fights. I assume everyone has good food and wine to accompany a fight, no?

We made the pasta carbonera from this month's Saveur last night for about 10 friends. Very good.
Of course, we also served a motzo crackers with the dairy and pork pasta, cuz, you know, passover.

I don't, but I'm curious. I just got an email from OS Winery (Ulysses). they need volunteer bottlers on Friday morning. Is the second day on a new job a good time to take off and go bottle wine (I think they give you 2-3 bottles for the effourt, plus sampling)?
