Tangent, but I made a great spiced pork tenderloin tonight. We should re-energize this board to share recipes/ideas. Mmmm. Pork!

I also do not have a recipe for a sweet potato pie, but would totally trust Paula Deen for that.

I like to take sweet potatoes, cube them, toss them in some olive oil and lipton's onion soup mix and then roast until tender. Mmmmm.

In related news, I was recently emailed a recipe for an onion tart that looks even more delicious than my famous onion tart recipe. I am thinking of making it for Thanksgiving. There is a possibility that both my ex-husband and current boyfriend will attend Thanksgiving dinner (Thanks, mom!). How weird will that be?

Did I tell you that I made your onion tart last year and the year before and it was very a big hit? Now it seems that I have lost the recipe, so would you mind reposting it sometime b/f thanksgiving?

I am probably spending thanksgiving with my bf's family, so I would like to make them onion tart and pumpkin pie (perhaps I can get Coltrane to give me his pumpkin pie recipe with real pumpkin, rather than canned -- or if any of you have one, I would love to hear it).

It's been a big hit here too. I may make this one and the new one, even though I usually make two of these.

Bn'B's Onion Tart

Tart:

8 ounces flour (about 1 1/2 cups plus 2 tablespoons)
1/2 teaspoon salt
1 stick cold butter, cut into 1/2-inch pieces
2 tablespoons solid vegetable shortening
3 tablespoons ice water

Sift the flour and salt into a large bowl.
Add the butter pieces and shortening and work them into the flour by hand until the dough starts to come together and form small pebbles.
Work the ice water into the dough 1 tablespoon at a time with your fingers until it just comes together, being careful not to over mix. If you cannot make up your mind if you need more water, you don't. Err on the side of dryness.
Form the crust into a disk, wrap tightly in plastic wrap, and place in the refrigerator to rest for at least 30 minutes before rolling out.
Preheat oven to 375 degrees F.

Roll the dough into an 11-inch circle.
Transfer to a tart pan or pie dish and press the dough up to the top of the sides, trimming any excess.
Cover the tart crust with a sheet of parchment paper and place a layer of uncooked beans in the bottom or use those pie weights someone gave you for Christmas that you don't know what to do with.
Bake in the preheated oven for 10 minutes, then remove the parchment and beans and cook for an additional 10 minutes until the crust has colored lightly.
Remove the crust from the oven and let cool.

The filling:

1 tablespoon butter
2 cups julienne onions (I like Vidalias, but use whatever tickles your fancy)
Salt
Freshly ground pepper
1/4 cup roasted garlic (can substitute minced garlic)
1/4 cup Gruyere Cheese
1/4 cup grated Parmigiano-Reggiano cheese
Drizzle of extra-virgin olive oil

In a saute pan, over medium heat, melt the butter.
Add the onions.
Season with salt and pepper.
Saute until caramelized.
Remove from the heat.
Spread the roasted garlic evenly over the crust.
Spread the caramelized onions over the garlic mixture.
Grate the Gruyere cheese over the onion mixture.
Sprinkle with the Parmesan cheese.
Drizzle with the olive oil.
Bake until golden brown, about 8 minutes.

New (and as yet untried) Onion Tart Recipe

1 half-recipe Martha Stewart’s pâte brisée without sugar (flaky pie dough; enough for one 9” tart shell), unbaked
1-2 Tbs olive oil
1-1 ½ lbs yellow onions (about 2 large), peeled and very thinly sliced
1 large egg
½ cup heavy cream
Salt
Freshly ground pepper
Grated nutmeg

Preheat the oven to 375 degrees.

Roll out the pâte brisée, and line a 9” removable-bottom tart shell with it. Cover it with plastic wrap, and chill it in the refrigerator.

Heat the oil in a large skillet over medium heat, and sauté the onions, stirring regularly, until they are lightly golden—just beginning to caramelize—and tender. Remove the skillet from the heat.

In a small bowl, beat the egg and cream together. Add a pinch or two of salt and pepper and a pinch of nutmeg. Add this to the onions, stirring to combine.

Remove the tart shell from the refrigerator, and fill it with the onion and egg mixture. Bake tart for 25 minutes, or until the filling is golden brown and set. Serve hot or warm.

I'm not Coltrane, but I have an excellent pumpkin pie recipe that I will post over the weekend.

Making a pie with fresh pumpkin is easy. Buy a sugar pumpkin. Cut it in half and remove the seeds. Place the pumpkin pieces cut side down in a roasting pan. You can put a tablespoon of water in the pan and/or cover the pan with foil, or not. Roast the pumpkin in a 400 degree oven for about 45-60 minutes, or until a knife slides easily into the flesh. Let it cool and scoop out flesh. You can freeze it if you have leftovers. The same technique works well with various winter squashes, with baking time varying according to the size of the pieces.
