I've found that the more you do this, the less your bill tends to be. I guess it is technically stealing on the wait staff's part, but what am I supposed to do? Not tip big?

Well, at the bar I go to, the barstaff either own the bar or are married to the guy who owns the bar. However they want to work it out, they'll work it out. They just had a baby last Monday night, so I think tips are up considerably this week.
