Interestingly enough, someone has already had this discussion.

And for those of you who do eat of the pig, the Sweet Potato Queens books have many bacon-related recipes, including Pig Candy. One of my neighbors brought it to book club once but I missed that meeting. However the verdict is that it was good.

Recipe: Bacon. Dark brown sugar. Roll the bacon in the brown sugar, put it on a rack on a cookie sheet (probably a sided pan would be best) and bake it at 350 degrees for 20 minutes.

When he has done wrong and wants to make me happy, my boyfriend makes me peanut butter and bacon mini-sandwiches. You take two pieces of bread and spread peanut butter in between, then cut in 1 inch squares. Then wrap each square in a piece of bacon and secure with a toothpick. Then put all squares in the oven and bake until the bacon is the way you want it. Yumm.my.

Oooh, the Sweet Potato Queens should hear about that one. It sounds much better than their similar recipe called "Love Lard."

Love Lard

Get a pound of bacon and cut the strips in half. Trim the crusts off a loaf of mushy white bread. Cut each slice of bread in thirds and smear some Cream of Mushroom soup on each one and lay it down on a bacon strip. Roll it up and stick it with a toothpick. Bake these little delights at 325 for one hour.


I made these for a neighborhood block party because I'd missed the Sweet Potato Queens book club meeting. They were OK.

The treats Gwinky's BF makes have peanut butter which in my book is hands down better than cream of mushroom soup.

Apple Cake

Since Love Lard and Pig Candy killed the board (probably clogged arteries), I'll post the recipe for a delish apple cake. It is amazingly good served warm.

Apple Cake

3 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) unsalted butter, at room temperature
¼ cup vegetable oil
2 cups sugar
2 teaspoons vanilla extract
3 large eggs, at room temperature
4 cups apples (3 to 4 large apples), peeled, cored and cut into ½-inch cubes
1 teaspoon cinnamon mixed with 1 tablespoon sugar for topping


1. Preheat oven to 350F. Lightly grease a 10-inch tube pan with a removable bottom with butter or vegetable oil. (I made it in a 12-cup Bundt pan. I also greased and floured it rather than just greasing.)

2. Sift the flour, cinnamon, baking soda, and salt into a small bowl.

3. Cream the butter, oil, sugar, and vanilla in a medium-size mixing bowl with an electric mixer on medium speed until the ingredients are blended, about 2 minutes. Stop to scrape the bowl twice, with a rubber spatula.

4. Add the eggs, one at a time, and mix on medium-low speed after each addition until blended, 10 seconds. Scrape the bowl each time. Once the eggs are added, mix again for 10 seconds.

5. Add half the dry ingredients and blend on low speed for 15 seconds. Scrape the bowl, add the rest of the dry ingredients, and mix on low speed until blended, about 5 seconds more.

6. Add the apples with a few turns of the mixer or by folding them in by hand with a wooden spoon.

7. Spoon the batter into the pan and sprinkle the cinnamon-sugar over the top. Bake the cake on the center oven rack until the top is firm and golden and a tester inserted at the cake’s highest point comes out dry, about 1 hour 5 minutes.

So, we had the maiden voyage of the new smoker last night, and it was a huge success. We made the Provencal Lamb Chops with Herbed White Beans from "Sublime Smoke" by Cheryl and Bill Jamison (which purports to provide lighter and healthier smoker recipes, even though I'm not sure this one qualified). It was wonderful. If anyone would be interested in the recipe, I am happy to post it, although I'm not sure who out there has a smoker other than Wonk.

Fugee, that cake sounds wonderful!

I'm glad it worked out well for you. If you want to get the most out of the smoker, you might want to check out a book called Charcuterie: The Craft of Salting, Smoking, and Curing by Michael Ruhlman, Brian Polcyn, and Thomas Keller. It's really the bible.

If what you try works out, post an update. I, also, am a big fan of nuts with apples. Just finished off the cinnamon, sugar and vanilla coated almonds from our outing today. Very yummy, and would probably work quite well with apples.

Help

I picked up some Old Bay seasoning and sprinkled it on some fries to emulate the Crab Fries I ate at Lincoln Financial.

Oh man, is this stuff good. I am relieved to find that it doesn't have MSG -- that hot feeling I get is from Mace and Red Pepper. I can't stop eating once I start.
