During this period, the Empire was marked by a strongly centralized administration connecting the different regions of India. All the significant monuments of the Mughals, their most visible legacy, date to this period.

Thank you, this is my point. It is the cuisine of the Timurid Mughals, not any specific region. The cuisine is the cuisine of Tamer the Great, Babur and Akbar, roving conquerers who were not limited to any one region.
There are little local cuisines throughout the subcontinent, but Mughali cuisine is the cuisine of the great all-conquering Mughals. It takes the best of the local cuisines and the best of Persian and Turkic cooking and combines them.

in the pix you posted yesterday there were like 1000 people. 3 appeared middle eastern- 4 were black- no asians. Do you have ethnic restaurants in Minnesota?

I just read an article on Salon.com this morning about Cambodian cuisine and one of the letters mentions that there is a good Cambodian restaurant in St. Paul.
