too fucking hot food
Best efforts aside, doesn't look like I can subside on gin and tonics alone. So a nice and easy hot weather thang:
Give an albacore loin (localler the better) a quick bath in some Huli Huli (sp?) or similar light teriyaki type stuff. Give it a quick wasabi rub, and roll it in a sesame seed-course black pepper mix.
Grill tuna to medium-rare (I totally overcooked it -- thank you, gin and phonecalls! Still good, though).
Toss your choice of greens (for me, some red leaf lettuce and spinach; in other words, what I had) with olive oil, rice vinegar, a drop or 3 of sesame oil, salt, and pepper.
Slice tuna, place on greens, and drizzle with a bit of wasabi/soy sauce mix.
Eat, and then keep drinking. Unless you've got weed. In which case, call me!

Unsolicited Soup
When I was in Prague recently, I ate a delicious soup that was described as a Bohemian potato soup with "forest fruits" (aka mushrooms). Two things made it both tasty and surprising to me. First, it was served with a poached egg on top (apparently the truly traditional garnish is chopped hard-boiled egg) and second, it had a sweet-sour note in a creamy broth. I looked around online to find a recipe and over the weekend, I came up with this hybrid that approximates what I ate.
I also finally learned how to make a decent poached egg (not overcooked and with the white spread all over), so yay me.
“Kulajda” -- South Bohemian Soup
2 cups mushrooms, thinly sliced
6 T. butter
1 medium onion, finely diced
1 t. caraway seeds, toasted and ground
1-2 bay leaves
3 T flour
8 cups (chicken) broth
1 lb. potatoes, peeled and diced
1 c. heavy cream
~1 c. chopped fresh dill
2 T. vinegar
2 T sugar
4 eggs
vinegar and salt
Melt 2 T butter in heavy soup pot. When it stops sizzling, add mushrooms, stirring occasionally. Sauté until the mushrooms shed their water and begin to caramelize. Remove from pan and set aside.
Add the remaining butter to the pot. Once it has melted and stopped sizzling, add the onions. Add caraway seeds, bay leaf, salt and pepper. Sauté for a few minutes until the onions begin to wilt.
Add the flour and stir, cooking for about 1 minute. Add broth and then potatoes. Bring to a boil and then simmer until the potatoes are tender.
Remove from heat and remove bay leaves. Purée the potato-stock mixture with a hand blender. Return to low heat and add the mushrooms and heavy cream. Add more salt and pepper to taste. Return to a boil and then allow the soup to simmer for a few minutes. Remove from the heat. Add the vinegar, sugar, and dill. Add more salt and pepper to taste. Allow soup to rest and meld flavors while poaching the eggs.
In a separate saucepan, bring water, with salt and vinegar added, to a simmer. Crack an egg into a cup or small bowl. Gently slip the egg into the simmering water and cook for about 1 minute. Gently remove from the water with a slotted spoon and slip onto the top of a bowl of soup just before serving.

I have probably posted this here before but am too lazy to scroll through and look. This tart is really really good and pretty easy to make. I make it with the vanilla cookie crust.

It's only 3 oz of cream cheese compared to 15 oz of ricotta and the texture is much lighter than cheesecake. I've only made that one exactly as the recipe. The filling is thin so use the miniature chips not the regular size ones. But I like the combination of orange and chocolate chips so that should be tasty.
This recipe (measurements in grams) has a filling with ricotta, chocolate, orange zest, and hazelnuts so it looks like the combination works. http://www.canadianliving.com/food/c...cotta_tart.php

Yummy. I included the mini choc chips but did not go on grocery trip so no hazelnuts. Maybe next time. Dad could only find chocolate wafers in 100 cal packs so used about 4packs. Used part-skim ricotta because that is what we had and had dad get lowfat or fat-free cream cheese. Yummy. Oh I said that already.

I would love to fuck but it is not an option so I'm settling for cooking. I'm making brownies this weekend and I'm looking for a recipe for a peanut butter layer to make them like peanut butter dream bars. I want something with like eggs and flour, not just to spread peanut butter across the top but something that will cook and get firm. Ideas?
