You people are sick.
Okay... I don't eat things that are intended to walk on four legs.
It's a guideline. Not a commandment or anything.

if they could genetically engineer a pig to only have two legs and to lose its cloven hooves, would it then be kosher? would that mean losing the legs for ham and/or bacon? What if we genetically engineer away just the hooves?

The four/two legs has nothing to do with being kosher, Hank. Properly slaughtered cows and chickens are both kosher. (As everybody knows.)
The fact that it has cloven hooves is a point in its kosher favor, silly. It just doesn't chew its cud, which is what knocks it from contention as a potential kosher foodstuff.

I thought the hooves made it bad. What if we crossed it with a cud chewer? I want to be able to eat ham in Philly. Ideas?

No, no, no...
Cloven hoof AND ruminant are the only eligible 4-legged animals (birds just have only to be not birds of prey). If they are slaughtered correctly, they're IN!!
Surely a brain such as yours can solve this little dilemma.

so if we can get pigs to be ruminants (I don't think they'll go for it; I wouldn't and they are supposedly smart), you could have bacon?
Mmmmmmm, bacon.

I'm told that such a thing as beef bacon exists. My gf, a Filipino-American (ie., big eater of the pig), married a Moroccan (ie., eater only of the halal), and almost entitled her personal blog "Beef Bacon Saved My Marriage."

I have taken an alternative approach. I have sociologically engineered away the kosher laws. Mmmmmmm, treyf.

I already told you, bacon is kosher. It's in the Talmud.

Beef bacon is called "pastrami." It's cured, smoked, beef belly (Deckel in Yiddish).
