The cookbook I have suggests subbing cream cheese for some of the butter when making orange or lemon buttercream frosting rather than vanilla. If I'm altering to mint, should I do the same?

You could if you want. I did a quick google search and found a recipe for mint frosting with half butter and half cream cheese and the note that the all butter version is very sweet; the cream cheese makes it a little less sweet and it has a tang from the cream cheese.
So if you want it to be not so sweet, use part cream cheese.

I made the cheesecake you --I think it was you, but maybe it was diva -- posted the link to, but with ginger instead of orange and finally had some tonight and yummy!! I'm going to have to talk my mom into ordering more candied ginger, though, because it's almost used up.

Cheesecake crusts with Graham crackers or ginger snaps are too overpowering, esp. with lighter cheesecake flavors (like lemon). Mrs. Grinch learned from CI to use crushed animal crackers, and we've never looked back. Save the Graham crackers for chocolate cheesecake, and eat the ginger snaps out of the box.

Those cookies are crack. A friend brought six boxes over to our Monday night cooking / sci-fi fest a few weeks ago, and they were devoured before the second episode of Babalyon 5 was over.
