Do you want the jam baked into the little bundt cakes or could it be added after baking.
If it doesn't have to be baked into the mini bundt cakes, you could make the bundt cakes and then after they have cooled, slice them in half cross-wise then spread some jam on the bottom layer and then top the jam with something creamy yummy -- whipped cream, mascarpone, etc. -- and put the top on. Or you could mix the raspberry with the creamy yummy stuff for filling.
If you want the jam mixed into the cakes then put half the batter into the mini bundt pans, then put a couple teaspoons or so of jam on top of the batter and spread it out. then put the rest of the batter on top and swirl it around a little with a knife.

I wouldn't add egg whites. Because the pans are smaller you could put the jam on top rather than at half full so there is more room to sink. You could also heat up the jam a little so it would be more liquid and spread nicer and not just sit in spoonfuls.
I always grease and flour bundt pans even when they are nonstick. The ridges make them more difficult to get the cakes out of if I don't.

I've never tried it for anything but caramel rolls (and that is a LOT of butter and sugar) and don't think I'd want to experiment with it with cakes.
