Query
Roasted butternut squash and cooked blackeyed peas mashed together and made into patties. Cheddar, Swiss or Parmesan? What seasoning? Cook in butter, canola oil or olive oil? I will be putting some egg in to hold it together.

Buttermilk mashed potatoes. Mix in some chopped chives. For veg, I don't know what's fresh at your market but all kinds of greens go well with pork. Pan-wilted chard, with a bit of pancetta for flavor?

My latest obsession
Roasted tomato salso:
5 roma tomatoes
1-2 tomatillos
2-3 cloves garlic (unpeeled)
1-2 serrano or jalapeno peppers
1/4 chopped cilantro
salt and pepper to taste
Line medium skillet with foil. Pre-heat oven to 325. Add tomatoes, tomatillos, galic and peppers. Dry roast over medium-high heat until peppers and garlic are done (3-5 minutes). Remove and continue roasting remaining ingredients in oven for 10 minutes or so.
Clean peppers to remove seeds and peppers, and remove skins from garlic. Combine all ingredients in food processor or blender, and pulse until combined. Check seasoning and chill to serve.
Okay, so that's really basic. Who has suggestions to improve?

You need a citrus note to round out the heat and balance the tomatillos. I'd go with lime juice.

I am proud to say that I have recently placed in a prestigious cooking competition.
My challenge was to satisfy 20 judges (19 members of the public who showed up to the event and 2 people who ate every single sandwich) in 45 minutes with a tasty grilled cheese sandwich consisting of 60 percent cheese and whatever else I could come up with.
I made a fresh mozzarella, hearts of palm and wood oven roasted tomato sandwich on homemade ciabatta, lubricated with a basil garlic butter.
I placed second in my category. I think I was up against 20 other sandwiches. Details on facebook and livejournal.
I anticipate an invitation to Top Chef any day now.
