They use database style software. You could do a search for a man looking for a woman, who is 30-40, has at least a college degree, is at least 5'10", weighs at least 175 lbs., blond with green eyes, etc. There are fields with specific kinds of interests ("My ideal first date is [fill in the blank from their trite pull-down menu of choices]"). Then there's a place where people can write free-form and usually something about your favorite movies, books, hiking, kayaking, Star Trek and other hobbies.
You post your profile and people can conduct searches and find you and write you an email (or wink or whatever). You can search based on your criteria, however broad or narrow, and see what comes up. If you think the picture and profile seems like the kind of person you might like, you reply. Then you evaluate further. You can't really tell much before any face-to-face meeting except obvious eliminations.
You learn to read between the lines if you do it a few times.
