See above -- mostly tunings or a different "sound" wanted for a different song (humbuckers v. single-coil or twelve string v. six, for example.)
(And sometimes it's exactly like hockey sticks. How many rock shows have you attended?)

Why they haven't developed the four-headed acoustic guitar for varying Capo settings yet, I'll never know.
