The problem with adding liqueur to meringue is that you are adding fluid that doesn't have protein so it might weaken the meringue structure or make it "weepy" if you add too much. I'm not sure how much is too much.

But several simple meringue recipes I saw with 4 egg whites used up to 1 tsp. of vanilla extract. You could substitute a liqueur for the vanilla extract. If you want a flavor in your pie meringue, you might try a different flavored extract instead of vanilla. It would probably give a little stronger flavor than the same amount of a liqueur.

Homemade liqueurs

The combination of Fringey's baking with liqueur and an article in the local paper saying that now is the time to start homemade liqueurs for Christmas gifts got me thinking about making some liqueurs.

Anyone have good recipes? I know RT has a recipe for limoncello because IIRC the lucky bitch has a lemon tree in her yard.

I got a couple books from the library but wanted to hear if there are any tried and true recipes here.

I don't have a lemon tree anymore, though I'm planning on a mini grove of citrus in my back yard sooner or later. I used this recipe, and I made lemoncello, lime-cello and grapefruit-cello. The lime was a pain in the ass because I used key limes and they have very, very thin skins. The grapefruit didn't taste as good as I thought it would. Lemon was the best.

I'm still jealous you can have a mini-citrus grove in your yard. I'd have to build a serious greehouse.

I have started a mini-fruit tree grove in the Fugee Manor backyard. So far I have a tiny little Honeycrisp apple tree I hope will survive the winter. The one I planted last summer didn't make it. I put this one in earlier so it hopefully has a good chance to establish roots by the time the ground freezes.

I'm trying to decide whether the next tree should be another apple (really it should because I need another for pollination) or a tart cherry tree. I also may put in a couple blueberry bushes next spring along the fence between my neighbor's yard and mine. If I put in too many trees, I'll have to move my full sun flower bed because it will get too much shade.

I'm jealous because you can have lilacs and peonies.

I really want my avocado tree to fruit.

I have a winesap apple (put in about 10 years ago by the previous owner), but right now I'm trying to figure out how to pick the last of my Italian prune plums. The tree is probably as old as the house (99! Big centennial coming up next year), and in the back, sloping-away corner of the lot, hard on the fence and surrounded by bamboo. There is probably a bushel of plums up there, if I can just figure out how to get to them!
