Food board meets Book board
So last week I read "As God Commands," an Italian novel by Niccolo Ammantiti. And like any good Italian book, buried inside the pages is a scene where some minor character starts waxing nostalgic about his favorite pasta dish -- in this case, Ziti alla Genovese.
And holy shit, it was good. Take six pounds of onions, a couple of carrots and a couple of celery stalks and a piece of veal (the character wasn't long on the recipe details) and cook it all fucking day. If you want to be like his beloved wife, add some bacon fat (I rendered some and cooked the onions and such in that) and cook it "for so long that the veal is merely a memory". Then toss some basil leaves and some cheese on it. Tastes amazing, and your house will smell like heaven for the next day or two.
