They dry beautifully. Just spread them on a sheet in the sun. I know, this is way late, but people may still wantto know what to do with a surfeit of morels.

When curing duck breasts to make prosciutto, it is important not to skimp on the salt and leave plenty of it between two overlapping areas. Otherwise, the result will be this beautiful gossamer mold, almost transcendant in backlighting.

If I make a pizza with a garlic/artichoke (not red) sauce and put shrimp, artichoke hearts and goat cheese on it, should I also put mozzarella over the entire thing?

It is really a matter of taste. Most people who put goat cheese on a pizza don't put mozzerella on, too. But the beauty of pizza is that, unless you are in Florence, there are no rules.

Chocolate Mint
Not the candy, the heb varietal. Chiffonade some, toss with sliced strawberries and a spoonful of sugar. Let macerate for about 1 hour. Serve with cream, ice cream, or simply stand in front of the open fridge, shoveling spoonful after spoonful into your mouth.

For me, pizza is all about the cheese so I'd add mozzarella even if I had goat cheese. If you aren't into the cheese -- or not into the mozza, don't use it.

Too bad you didn't post this a week and a half ago, when I was home and it was peak strawberry harvest and I had chocolate mint close at hand. No strawberries in Utard worth eating.

I wouldn't. I love mozzarella but don't think it goes at all well with those other ingredients. Which I also love.
