As I was just explaining to another poster here, Minneapolis has the largest Hmong population in the country, perhaps the largest outside of southeast Asia. The Ethiopian/Sudanese subgroup are the Anuak. More than 2000 Anuak live in Minneapolis and southern Minnesota (and that is a high percentage of the population of Anuak worldwide).

I don't know if the Anuak are the subgroup that serve the food at generic Ethiopian restaurants, but I miss those restaurants terribly. I think that there's only one in Houston, and it's halfway to San Antonio.

Adhering to the law that at least one Ethiopian restaurant in the area is called "The Blue Nile", it is called "The Blue Nile."

I used to work with a lot of Cambodians and the focus of our work related to cross-cultural issues. I heard about Cambodians surviving the "Pol Pot times" by watching the birds in the forest and eating what the birds ate. I also heard about them eating some kind of giant water bugs that American colleagues said look like giant cockroaches. I've never heard of anyone eating elephant. I also just googled and found a story about poaching elephants in Cambodia. The Cambodians kill elephants because they trample their crops, they want the tusks for ivory or they want to sell the babies to the zoo.
