Almost any savory seasoning you like. I'll dip an egg in a good BBQ rub or mustard. The hard boiled egg is a good flavor carrier and rarely clashes.

While I love buffalo, I find that it doesn't make great burgers because it's too lean. It gets much too dried out.

I've had buffalo in very very pink steaks and there's still a problem. I'm always left a little bit unsatisfied by buffalo steaks or burgers. Whatever it is about beef that scratches that ol' Neanderthal itch, buffalo doesn't have. It must be molecular -- that flood of endorphins that comes with beef and a glass of red wine just isn't there.
ETA I've recently come to realize this is also true of veal. YMMV.
ETAA maybe I mean serotonin, not endorphines. Your endocrine system may vary.

I hadn't had buffalo for years until recently and I must now disagree.
Maybe it was the chipotle mayo and bacon on the burger, or the belgian beer before and with the burger, I can't really be sure. But it was one of the best burgers of recent memory. I didn't know it was buffalo until I asked for the recipe.

Almost any kind of curry sauce. Just bath the eggs in the sauce.
Paprika.
Chopped fresh herbs.
How about eggs minced with parsley and onion spread over bread?
Good in a rarebit, too.
So many things you can do with eggs.
