There is no fucking, so I have no option. If I were to make cardamom cookies (rolled out and cut with cookie cutters) and I wanted to decorate or make sandwich cookies, what kind if icing or jam would be good?

Part of the Hannukka tradition is to serve something that is fried, to celebrate the miracle of the oil. In many families, potato latkes fill this role. In others, especially with Sephardic Jews (of Mediterranean or North African descent), where sweets are more popular than savory, doughnuts are more traditional.
One year, my first wife made little discs of fried polenta and served a sort of bruschetta-type thing with artichoke hearts, olives, garlic, shallots and tomatos.

My favorite cardamom cookie recipe calls for drizzling melted chocolate as well as a sugar icing with espresso powder mixed in. The cookies are pretty great plain but the icing and chocolate drizzles definitely take them to the next level.

Tortilla is Spanish for little cake. The tortilla is very similar to a frittatta. It is very traditional to use potatoes and onion. The ham can be subbed out for smoked chorizo (very different from the Mexican fresh chorizo used in huevos con chorizo, etc.)
Unless you have a mandoline to slice them very thinly, the potatoes should be par-boiled first or they may not cook completely otherwise.

I need something low fuss and that can be made mostly in advance. Definitely not going to spend all night in my friend's kitchen frying latkes.

We have a ton of citrus right now, and my sister and I were trying to figure out how best to use it over the holiday, so we made a lemon and grapefruit curd, more or less using this recpie. It turned out fantastic. Especially on my dad's homemade bread.
