This recipe will work for just about any root vegetable - potatos, carrots, onions, parsnips, whatever. I like potatos, carrots and onions together, personally, although throwing in parsnips is good too. Just make sure to cut everything more or less the same size pieces (carrots can stand to be cut a little smaller). And don't peel the potatos.

I like white and sweet potatos, cut into about 1 inch cubes, tossed in olive oil and dry Liptons Onion Soup Mix to coat and then roasted. It's lowbrow, but very very tasty.

The other variation that I make a lot is to toss with olive oil (sometimes I'll use walnut oil), salt and pepper and Herbes de Provence. If you like lavendar, Penzey's has a great blend (plus you'll get your rosemary flavors).
ETA: I dislike beets but got a lot of them this summer/fall from my farm share. I give them to my SIL. Right now I have several pounds of beets in my fridge. Sometimes I roast them for her whole, wrapped up in an aluminum foil pouch with a little olive oil, salt and pepper, as you would roast whole heads of garlic. That way you don't have to clean all the red juices off everything.

Parsnips are a great undiscovered treasure, which until recently I'd only ever had boiled with corned beef. I had roasted parsnips at a dinner thrown by a British woman who knows 'er root vegetables. Roasted parsnips make potatoes taste like ass.*

Tried this tonight with some grilled New York strips and Charles Shaw's cabernet. As you promised, lowbrow but very very tasty. My advice to others is to go real light on the Lipton's --- a little goes a long way, and a lot can mask the flavor of the potatoes.
My favorite white trash comfort food (after the Gold Standard of WTCF: tuna casserole with crumbled potato chips) is probably Rosy Noodle Casserole. I can't find Mom's recipe (warning: DO NOT Google "rosy noodle"), but this sounds pretty close, if you take out the bell peppers and use paprika instead of Italian seasoning: link .

Apologies if someone covered this already, but ours is white trash dip: a pie pan with layers of refried beans, sour cream, salsa, grated cheddar cheese, and onions.
No ketchup.

It's been a while since I indulged my WTCF needs, and it's not always easy to get the main ingredient, but when you can there is nothing like possum entrails sauteed with some garlic and onions and a side of hot scrapple. Grain alcohol and hawaiian punch cocktails are nice to wash it down the ole gullet.
And lots of catsup. Hunts.

In college, on long weekends, Penske and I would drive down from Boston to his house. Once off the interstate we had to keep our eyes peeled for road kill. Back then the woods were alive. We never could bring other friends because the backseat always filled up with dinner.
Mrs. Penske seemed to change her shack-ups pretty regularly back then, but one thing I recall all those men had in common was they were good with a knife. They'd have the carrion gutted and skinned lickidey split, and then we set into eating.
Freshman/sophmore/junior years-- mmmmmmm. just before we started senior year the siphallis finally reached her brain, and she had to be institutionalized, but by then Ironweed's sister was a freshman so I wasn't leaving campus anyway.
