Seven-on-seven is the norm, though I've seen smaller for smaller fields, or where 14 players cannot be found.
And going back to the original post, you have to be pretty insane to play guts frisbee. If you want to mock someone's manliness, there's plenty of better frisbee sports you can use -- double-disc-court comes to mind. Guts is teams of 5 lining up ten meters apart and whipping the disc as hard as they can at the other team, which uses any part of their body to tip the disc so that it can be caught by their team with one hand.
Ultimate is one of the two things in which I have competed for a national championship (3-2 record in pool play at college nationals in 1995, missed the semi finals after losing to UNC-Wilmington in the final game of pool play). Bridge is the other (one national title to date). So out-dork that!

UF is now a varsity sport for thirty high schools here. The HS football team members in my burb are assigned to play it on the offseason, but most of them get too winded to play hard for the first couple of weeks.

I agree if your point is that Dallas and LA are more comfortable and climate-friendly places to work than most of the rest of the country. And I point out that there is a good reason why I chose those locales in the first place.
Or, as fringey might say (if I were able to predict what she might say, which I am not), I'd rather fit in with the business casual crowds in Dallas and LA than with the stuffy-ugly-conservative-suit-wearing crowd in DC.
