I agree with Burger and ncs. Having been the recipient of a few such letters (most amusingly, once from a guy that moved for sanctions against me, my firm, and a new associate who was so scarred by the experience that he became a transactional lawyer), I can assure you that the hiring people are used to seeing requests for confidentiality.

Ah, he was someone that you encountered in practice, and moved for sanctions against you as opposing counsel, not as an applicant for employment. I was imagining a scenario where an applicant threatened sanctions against as a result of the recruiting process.
