I have not been to the deep south. Orlando doesn't really count. The deepest south I have been is Kentucky - where they fry the tomatoes. And grits. And ham. And chicken. But not pickles.

Ron says he had the deep fried battered pickles in an upscale (not sure what that means in his world) restaurant in LA. Is it common is Detwah?

You can get them here at Katz's, home of the Chocolate Eruption, a dessert I am incapable of ordering with a straight face. I don't think that they're that bad.

Fried pickles sound good to me, if they are fried in hot oil so that the coating is crispy. I don't deep fat fry at home, though, so I'm unlikely to have them.

of course they sound good. everyone finds them disgusting, or at best Okay, yet they are all over menus across the South. What with no one ordering them you'd think the restaurants would take them off.

The ones at Katz's are breaded in cornmeal, sort of the way you make fried green tomatoes. I've never tried any deep fat frying at home either and I'm unlikely to try. I've only had partial success in making the breading stick to fried green tomatoes. I think that I don't have the pan hot enough. Or maybe it's that I don't deep fat fry them.

Fried turkey is surprisingly good, and extremely quick to cook. I guess the only problem is risking the third degree burns to make it, but whatever.

Two solutions, by the way. As for bacon specifically, you can bake it by putting it on parchment paper on a jelly roll pan. That will reduce the cooking odors. Otherwise, you can put a shallow, wide-mouthed bowl of white vinegar next to the stove as you are cooking and it will absorb the odors so that they don't linger in the house. The house will still smell good like Bacon! while you're cooking, but not so bad afterward. This only works if you can stand the smell of vinegar, although it shouldn't be overpowering -- it will only smell like vinegar near the stove.
|
Does that (the vinegar) work for other cooking smells like fish, garlic, or onion?

I did, but then I undid it. Thinking new day, new start. And yes, RP already pointed out the problem with this.

fried green tomatoes are supposed to be pan fried, aren't they? at least that's how I make them.

Ok, people, it's crunch time. If you haven't already figured it out, somewhere, in a dark, cramped, windowless room, Penske is planning his next k-race snipe. We have an opportunity here to send a message, one with far-reaching consequences. For the next 15 mins or so, I expect every active poster to post as much as possible. Shotgun approach. Follow the lead of some other posters and turn off that internal filter. Just post utter crap.
