what I don't feature is how starbucks makes money. a dozen people buy 1 cup of coffee at $2.50 then sit at a table for an hour. a restaurant has to make way more than that a square foot doesn't it/ i mean I know they are making money- but I don't get how.
Perhaps it's the 125 people who walk in and out getting theirs to go while the unemployed and indolent lounge at the tables.

yeah but 10% of the floor space is used to service those 125, while 90% is reserved for the lingerers. Why not just change to stands?

it's fun to waste time here criticizing others for not working. i have a partner who sits all day at one- buys a cup of tea and get free hot water. I really just don't get the economics.

Green Bell Peppers

I have a whole bunch (like 6) of them from my farmshare. I really don't like them much because I find them hard to digest. All the recipes I've found using bell peppers call for ripened ones. I thought of gazpacho but the Joy of Cooking recipe only calls for one with 2 1/2 lbs of tomatoes. I have plenty of tomatoes but it hardly solves my pepper problems. Any ideas?

I hate green peppers. I'd throw them away.

Pasta sauce with italian sausage? Or roast them, slice them fairly thinly, and marinate them in olive oil. The red ones are usually better for that but green will be ok.

One of my favorite, favorite dishes in the world is something my family calls "fork wars" because everyone's fork is reaching for something at the same time. Basically, you take a shitload of whatever vegetables happen to be in season, cut them into bite sized chunks, throw them in a roasting pan, drizzle them with olive oil and salt and pepper and maybe throw some rosemary sprigs in there, cover with tin foil, and roast. Usually there are green peppers in there.

If you do that thing where you char the skin off, are they easier to digest? It seems like it to me. You could make very green peppery gazpacho -- it's not like it's a baking recipe, where if you don't keep the measurements proportional, disaster ensues.

If you can't eat them because they're hard to digest, why not give them away or throw them away?

How does cutting them up help?

If it's just the taste you can't abide, I'd make fajitas or something and cook them up real good and soft.

I'm generally a red pepper person over green, too, but the fajitas is a good suggestion.

One thing is that peppers freeze really well. Cut them into whatever size you're going to be eventually using (strips for fajitas, diced for other recipes) and freeze in recipe-sized increments. Then later you can just pull them out and pop them into the pan still frozen. Works like a charm.

Back to fresh uses: what about stuffed green peppers? It's very retro, but quite tasty.
