Well, you haven't seen the complete ouevre, but the whole counseling thing lays out his belief she's more interested in keeping the house clean than fucking. He's in a hotel because they're separated while they go through counseling. And, well, you kind of have to watch, but it wasn't a one-off thing--it was part of a recurring pattern that troubles him.

Apple Crisp recipe for fringey

I just came across this recipe which was reprinted in our local paper. I kind of prefer a crisp with a buttery, shortbready crust (dryer than it sounds like you wanted), so this might be good for you.

Apple Crisp
Makes 8 to 10 servings

Active time: 30 minutes
Start to finish: 1 3/4 hours

When the chef Claire Archibald was at Cafe Azul in Portland (now closed), she created this recipe, using Yellow Transparent apples because they have a great flavor and do not turn into mush as they baike. We've substituted Macouns, Fuji and Jonagolds and the result is a butter-rich nutty crisp that is quite simply the finest we've ever had.

If you can't find one of the varieties in your market, substitute another good baking apple.

Topping:
2 1/3 C all-purpose flour
3/4 C firmly packed dark brown sugar
1/4 C granulated sugar
3/8 t ground cinnamon
3/8 t salt
1 C unsalted butter, cut into tablespoons, softened
1 1/3 C pecans, toasted and chopped (see note)

Filling:
1/2 C granulated sugar
1/2 t ground cinnamon
5 lbs Macoun, Fuji or Jonagold apples
2 T fresh lemon juice
finely grated zest of 1 orange

Put a rack in middle of oven and preheat oven to 375 degrees. Lightly butter a shallow 3 1/2 to 4 quart baking dish.

To make topping: Combine flour, sugars, cinnamon and salt in a food processor and blend until well-combined. Add butter andpulse until mixture forms large clumps. Transfer to a bowl and work in pecans with your fingertips.

To make filling: Whisk together sugar and cinnamon in a large bowl. Peel, quarter and core apples, then cut into 1/2-inch-thick slices. Add apples, lemon juice and orange zest to sugar mixture and toss until well-combined.

Spread apples in buttered baking dish. Crumble topping evenly over them. Bake until topping is golden brown, about 1 hour. Cool to warm.

Note: To toast nuts, spread on baking sheet and bake in 375-degree oven for 5 to 8 minutes or until brown.
