I shred a bunch of potatoes until I am too bored.  Then I shred about half an onion.  I mix in an egg and a scant handful of flour, salt and pepper (with my hands), until it looks like it will stick together without being too runny.  
 
I use my electric skillet once a year to make latkes.  I do them in wesson oil.  It's disgusting and the house smells awful for a day or two.
 
Serve with chunky applesauce AND sour cream.

 |   Containment:  Use one of those spatter screen things over the frying pan while cooking, and keep the kitchen as shut off as possible until you finish cooking the the grease has the chance to settle out of the air and onto surfaces.  Put the clothes you wore to cook right into the washing machine.  
 
Cleaning:  wipe down with grease-destroying substance all surfaces (incl. vertical ones like cabinets) within a fairly large radius of the cooking area.  Run the washing machine as soon as possible after putting the grease-stinky clothes in there.  Take a shower.
 
ETA no, making applesauce won't take care of the greasy odor, but the time you spend doing it will allow the grease to settle out of the air, and then it can't be carried around the house as much as if the kitchen is all open and stuff.   |

 |  You could do it with red skinned potatos.  I think they are wetter than regular baking potatos so you might want to pat them down with a paper towel after shredding.  
 
Try onion powder.  That should be fine.
 
I have made my own applesauce, but I don't have any at home right now.  I'm actually not making latkes tonight, as I am going to a latke party tomorrow and having latkes at my mom's on Thursday.  And that's enough fried crap for me for one week.

 |   I (sigh) don't own onion powder or dried onions or anything liek that.  I have chives.  Or, I could just go to the freaking store that is on my way home.  I think realistically, they aren't in my immediate future.

 |  I seem to remember that you have mentioned this before and that you also had some dandy solution for eradicating kitchen odors.  But I have never been able to remember what your tip was.  A shallow bowl of vinegar next to the stove or something like that?

 |  Yes, that was it.  And it works pretty well for cooking bacon or doing a couple of chicken breasts on the grill pan, but it seems a weak opponent to a skillet full of oil.  And it's actually too cold in D.C. right now to open the kitchen window.  Plus, I have extra smell sensitivity right now. |
