I also like starting sentences with "and" a lot.  I see no reason that can't be done in lieu of the shitty flow you get when you link thoughts with ", and."  
 
I realize I just violated the rule on putting the period before the last quotation mark, but I don't know how to do that in the context of that sentence.

 |   learning to properly drink Belgian beers is a process that takes steps beyond just getting drunk. Belgian folk often take classes, or will spend time, months often, with brewers to learn how to pour and quaff properly.
