I'm a huge fan of cracking sentences in half with "-" or ";".

I also like starting sentences with "and" a lot. I see no reason that can't be done in lieu of the shitty flow you get when you link thoughts with ", and."

I realize I just violated the rule on putting the period before the last quotation mark, but I don't know how to do that in the context of that sentence.

The Flemish traditionally drank their beer from open-mouthed tankards; of course, the Walloons used narrow glasses.

learning to properly drink Belgian beers is a process that takes steps beyond just getting drunk. Belgian folk often take classes, or will spend time, months often, with brewers to learn how to pour and quaff properly.

It's implied with the ";". That you said it at all creates the comparison. At least for me.
